4 package (10 ounces each) cleaned, fresh spinach 1 cup (6 ounces) crumbled feta cheese 1/2 cup chopped, canned pitted black olives 2 tablespoon extra-virgin olive oil 1 pinch Salt and black pepper, to taste |

| Preparation: Poke a few holes in the spinach bags and microwave them on high (2 at a time) for 4 minutes, until the spinach is wilted; drain. While the spinach is cooking, toss feta, chopped olives and olive oil in a serving bowl. Add the spinach, and toss to coat. Season with salt and pepper. |
