3 large baking potatoes (1 pound each) 1/2 C sliced green onion 1/2 C butter, divided 1/2 C half-and-half cream 1/2 C sour cream 1 teaspoon salt 1/2 teaspoon pepper 4 OZ shredded cheddar cheese 1 paprika |

| Directions: | ||
| 1. Pierce potatoes with fork, rub with oil if desired. Bake at 400 degrees for 1 hour 20 minutes or until tender. Let stand to cool enough to handle. 2. Cut each potato in half lengthwise. Scoop out the pulp, leaving a thin shell. Place pulp in bowl and mash. 3. In small skillet, saute onions in 1/4 cup butter until tender. Stir into potato pulp along with cream, sour cream, salt and pepper. Fold in cheese. 4. Spoon into potato shells. Place on baking sheet. Melt remaining butter; drizzle over potatoes. Sprinkle with paprika. Bake, uncovered at 350 degrees for 20-30 minutes or until heated through. |
