1 pieces Star anise 1 medium onion - chopped fine 5 pieces cloves 5 pieces whole pepper 1 cinammon stick small piece 1 bay leaf, salt to taste 1 cup rice (uncooked Basmati) 2 cups water or chicken broth 1 tablespoons Oil (Olive or other) |

| Run uncooked rice under water, until starch is washed off and let soak for about 20 mins. Chop a medium sized onion finely and leave it aside. Add one tablespoon oil in a pan on medium to high heat. Once hot add anise, cloves, pepper, cinnamon and bayleaf. Stir while frying, dont let it burn. Once the flavours are released add in the chopped onions and cook until transluscent. Once done drain rice and add in into the pan while heat is on high. Mix for about a minute and until rice is coated with oil. Add 2 cups of broth or water and salt to taste..Once it comes to a boil, cover with a lid and turn heat to low and let rice cook. after about 12 mins or so check to see if the water has all reduced. If yes keep lid on and turn off heat and let the steam finish the cooking. You can give a qucik stir too to make sure the rice isnt sticking to the bottom of the pot. Once cooked serve on a serving dish and garnish with roughly chopped cilantro and/or mint...Enjoy with baked chicken or mushroom gravy:) | ||
