1 each 1 cup flour -- unbleached 1 each 2/3 cup cocoa powder -- reduced fat [I used regular cocoa] 1 each 1 teaspoon baking powder 1 each 1 teaspoon baking soda 1 each 1/4 teaspoon salt 1 each 1 cup Prune Puree [recipe follows] 1 each 1 cup sugar 1 each 1 teaspoon vanilla 1 each 2 tablespoons Egg Replacer [could probably use soy powder also] 1 each 1/2 cup water |

| Directions: | ||
| * Preheat the oven to 350 degrees. * Combine flour, cocoa, baking powder, baking soda, and salt in a bowl. Set aside. * Mix Prune Puree and sugar together in a separate bowl. Stir in the vanilla. * Mix the Egg Replacer and water together and whisk until very frothy. * Add to the sugar mixture and stir to combine. * Add the wet ingredients to the dry ingredients and stir until mixed. * Do not overmix. * Spoon into a nonstick 8-inch-square baking dish and flatten. Bake for 30 minutes. |
