1 each 2 cups granulated sugar 1 each 4-1/2 cups water 1 each 2 cinnamon sticks 1 each 1 cup olive oil 1 each 3 cups semolina 1 each 3/4 cups blanched almonds (6-8 halved, the rest chopped) 1 each 1/2 cup honey-style sweetener 1 each Ground cinnamon, to taste |

| Directions: | ||
| * Reserve 4 tablespoon sugar and dissolve rest in water over gentle heat. * Add cinnamon sticks, bring to a boil and simmer gently 5 minutes. * Cool and remove cinnamon sticks. * Heat oil in a large heavy saucepan and when hot stir in semolina. * Cook, stirring occasionally until golden brown. Add chopped almonds and cook 1 minute. * Keep heat low and stir in sugar-cinnamon syrup, taking care as semolina may split. Bring to a boil, stirring constantly. * When smooth, remove from heat and stir in honey. * Cool slightly and mix in reserved sugar. * Pour halva into a lightly greased (or non-stick) shallow pan, pat down and mark into squares. * Sprinkle with ground cinnamon and 1 almond half. |
