4 each potatoes, vegetable oil (olive oil doesn't make them very crunchy), rosemary, salt(if desired) |

| Directions: | ||
| Chop potatoes (leave skin ) Par boil potatoes- just until you can see skin slightly peeling back Drain Place on an oven baking tray Sprinkle with fresh rosemary(and a little salt if desired) Drizzle oil over Toss gently to cover potatoes with oil Bake in a fairly hot oven until crispy You might like to add whole cloves of garlic. You also might consider baking whole mushrooms which are particularly delicious. Tomatoes and corn are also very tasty baked alone or brushed with your favourite herbs/sauces/oils/dressings etc |
