Ingredients:
1 each 1 yellow onion -- chopped
1 each 1 green pepper -- chopped
1 each 1 pound tofu -- frozen and thawed
1 each 1/2 cup ketchup
1 each 1 tablespoon prepared mustard
1 each 2 tablespoons cider vinegar
1 each 2 tablespoons soy sauce
1 each 2 tablespoons honey-style sweetener (eg maple syrup)
1 each 1 teaspoon chili powder
1 each whole wheat buns
Directions:
* Squeeze the excess water from the thawed tofu and crumble.
* Saute the onion and green pepper in a small amount of water until softened.
* Add the tofu and the remaining ingredients and mix well.
* Cook about 10 to 15 minutes, stirring occasionally.
* Serve on whole wheat buns with your choice of garnishes.

No way these will serve 8; I make a half-recipe and eat the whole thing in one sitting.
