1 each 1 cup. chopped onion 1 each 1 cup. chopped green pepper 1 each 2 teaspoon. margarine or oil 1 each 2 cup. sliced mushrooms 1 each 1 (15 oz.) can tomato sauce (or 1 large can tomatoes) 1 each 2 lb. firm tofu 1 each 1/4 cup. tomato paste with 1 each 1 teaspoon. sugar (or 1/3 c. catsup) 1 each 1 teaspoon. cumin 1 each 1/2 teaspoon. basil 1 each 1 teaspoon. salt |

| * Saute onion & pepper in margarine or oil. * Add mushrooms & saute about 2 minutes. * Stir in tomatoes & spices & simmer about five minutes. * Cube tofu & add & simmer another 5 to 10 minutes. * Ladle over rice or lightly toasted burger buns & serve. |
