Boston Baked Beans

Directions:
* Cook the beans in unsalted water for 1 hour.* Drain and reserve the liquid. Use a heavy casserole with a lid and place the onions at the bottom.
* Cover with the beans.
* Mix the sugar, molasses, mustard, salt and a good amount of black pepper with 1 cup (250ml) of the bean liquid.
* Pour over the beans, stir gently and cover the casserole.
* Bake for at least 3 hours at 250F (125C) adding more liquid if too dry.

Preparation:Carefully pierce each olive several times with the tip of a small knife. Combine the black and green olives with the oregano, chiles, and olive oil, and mix well. There a million variations on this recipe.My husband and I made one up.
The trick is to get the bread slices crusty.
Combine the chopped tomatoes, chopped onions, diced cucumbers with a bit of red wine vinegar in a bowl.
Season to taste with salt and pepper and the basil.
Toast the vienna bread in slices which are thick in the toaster first.

I have two ways of making chilaquiles:When I have the time, I get some dried red chiles (pasilla or whatever) boil them in some water with about 5 garlic cloves, half an onion, serrano or yellow chiles, pepper and salt, for about 10 minutes or until soft.

Then add the flour and finally the cranberries and nuts.
On a greased baking sheet shape the dough into a loaf 3/4 inch high and 3 inches wide.
Bake in a 325F oven for 35 minutes.
Let cool for 5 to 10 minutes, then remove loaf from baking sheet and slice the loaf into 1/2 inch slices.
Place slices on their bottom edge on cookie sheet, leaving a space between slices.
