* Saute onions and garlic in a little of the stock until starting to soften.* Add the tomatoes and the cooked beans and the mint. Season to taste
* Simmer gently, covered, for about 20 minutes to allow the flavours to blend.
* I like this as a supper dish with wholemeal bread rolls and a green salad.

Directions:
I have two ways of making chilaquiles:When I have the time, I get some dried red chiles (pasilla or whatever) boil them in some water with about 5 garlic cloves, half an onion, serrano or yellow chiles, pepper and salt, for about 10 minutes or until soft.
Then I blend it all, and strain.
Put this sauce aside.
Heat up a pan, then add a good amount of oil, and add torn or cut tortilla strips to fry.

Combine tomatoes, chipotle chilies, onion, cilantro and salt in medium bowl.Toss until mixed.

Cut small slit in each Anaheim chili.

Place chilies in paper bag; allow to steam for 5 minutes.

Directions:
Cream margarine and sugar.Beat in the water, Cointreau, baking powder, and salt.
Then add the flour and finally the cranberries and nuts.
On a greased baking sheet shape the dough into a loaf 3/4 inch high and 3 inches wide.
Bake in a 325F oven for 35 minutes.
Let cool for 5 to 10 minutes, then remove loaf from baking sheet and slice the loaf into 1/2 inch slices.
Place slices on their bottom edge on cookie sheet, leaving a space between slices.
