1 each Cucumber - large 1 each Onion - also large (though this is dependent on taste), Cold Stock Substitute (anything not too strong in taste), Condiments to |

| Coarsely grate both the whole cucumber and the peeled and topped onion and place in a bowl. Then make up enough of the stock substitute to make two good sized portions of soup. (The amount of stock required is up to personal taste and this recipe could easily stretch to 4 portions if desired.) Next chill the stock substitute and add to the cucumber and onion. Stir and serve, with cucumber rind to garnish. |
