Ingredients:
1 each 1 1/3 cup lentils
1 each 1 cup chopped onion
1 each 1 stalk celery, chopped
1 each 1 medium carrot, chopped
1 each 2 garlic cloves, minced
1 each 5 cups vegetable stock or water
1 each 4 tablespoon soy sauce
1 each 1 or 2 bay leaves
1 each 1 tablespoon salt
1 each 1/2 tablespoon basil
1 each 1/2 tablespoon thyme
1 each 1/2 tablespoon oregano
1 each 1/4 tablespoon ground pepper
1 each 1 cup chopped tomatoes
Directions:
* Cook lentils in stock for 30 minutes.
* Meanwhile, saute veggies until softened, add spices and cook another minute or so.
* Add veggies to lentils and simmer for 1 hour.
* Add tomatoes in the last 5 minutes of cooking.
