Ingredients:
1 each 1 tablespoon margarine
1 each 4 shallots, chopped
1 each 2 tablespoons plain flour
1 each 3 cups soy drink
1 each 3 small zucchini, grated
1 each 310g can creamed corn
1 each 10g veggie stock cube
1 each 3/4 teaspoon salt (I didn't use salt as stock cube was little salty)
Directions:
* Place margarine and shallots in a saucepan and saute for 1 minute
* Stir through the flour, then cook for further minute
* Remove from heat and gradually add soy milk, then remaining ingredients.
Stir over medium heat until the mixture boils and thickens.
* Great for cold nights!!
