Directions:
Start mixing the oil with the sugar and then add all the other ingredients one by one (except for the cognac), working the mixture as you go along.Bake in a moderate oven.

Heat olive oil in a skillet over medium heat.Saute onions and garlic until onion is translucent.
Add a can of organic diced tomatoes (Muir is really good), the capers, olives, and red wine.
Add salt and black pepper, as copiously as your taste can tolerate.
Simmer for about 10 minutes. Serve over a pasta large enough to handle it -- spaghetti or linguine are tasty.
Top with vegan parmesan substitute.

Directions:
Cook the capellini according to package directions.In the meantime, in a large bowl, combine the chopped tomatoes, tomato juice, garlic, basil, olive oil, vinegar, and salt & pepper.
Toss well to mix and set aside.
When pasta is done, drain and immediately pour into the bowl with the tomato mixture.
Toss to mix and coat all the pasta.
Serve at once.

Bring to a boil and simmer 3-4 minutes.

This summer I plan to use fresh herbs with it.
Another variation could be to substitue your frozen pesto for the dry basil.
