Directions:
* Place bulger in a large bowl and pour in boiling water until well-covered. Let stand at least 20 minutes.* Drain in sieve & press out excess moisture.
* Return to bowl & add vegetables & herbs.
* Stir in spices.
* Whisk lemon juice & oil together & add to salad, tossing to coat.
* Serve with romaine lettuce at room temp.

* Soak *don't ever* boil the bulgar or couscous in same amount water with curry powder mixed in.* Stir occasionally for the first ten minutes.

* Chop parsley, tomatoes, green onion very fine.
* Send garlic through a press (more if you like)
* Mix couscous/bulgar, lemon juice, oil and pepper to taste.

* Stir in the parsley or chives to give colour.
* Serve chilled. This dressing is best if used within a few days of making.

Directions:
Cook the spaghetti according to the instructions on the packet (they know best). Meanwhile, gently heat the oil and cook the crushed garlic through, then stir in the chickpeas and keep it all hot. When the spaghetti is done, drain it and toss everything together, with olives if liked. Season and serve.Thinly sliced mushrooms fried with the garlic are a good variation.

Directions:
Puree the water, tofu and miso in a blender.Saute the herbs, salt and onion in the oil and add the tofu mixture.
Bring to a boil and simmer 3-4 minutes.
Remove the bay leaf.
Serve over spinach linguine.
This summer I plan to use fresh herbs with it.
Another variation could be to substitue your frozen pesto for the dry basil.

Directions:
Wrap tofu in cloth or paper towels for a few minutes to remove excess water.Mash.
Mix well with all ingredients except oil and tomato sauce. Form into 24 small balls and flatten slightly as you place them in oiled baking dish.
Sprinkle a little oil on each.
Bake at 375 for 20-25 minutes, turning once to brown both sides.
Spread tomato sauce over balls.
Bake at 350 for another 15-20 minutes.
Serve over pasta or on a sandwich.

1. Peel and finely chop the onion and carrot.Saute in stock made with the cube (or use oil if you prefer) until vegetables are softened.
